First Generation Ranchers

Alex and Kelsey Karol, owners and operators of Outlaw Valley Ranch, are passionate about the land and working with their hands. Despite not growing up in a farming or ranching background, they were driven to be more connected to their food and make a positive impact on the environment.

From Organic Agriculture to Livestock

Their journey in organic agriculture started at Linn's farm in Cambria, CA, where they grew vegetables for the farm's restaurant. As they delved deeper into agriculture, they discovered the regenerative effects of grazing animals on rangeland. This knowledge sparked their interest in raising livestock and managing their own sustainable protein factory.

Let Us Be Your Local Ranchers

Outlaw Valley Ranch takes pride in their 100% grass-fed and finished meat, free from antibiotics, hormones, and grain. Their commitment to regenerative grazing and beyond organic practices ensures that their animals are humanely treated and the meat is of the highest quality. With transparency and USDA inspection, customers can trust the integrity of the ranch's practices.

The Navajo-Churro Sheep

Outlaw Valley Ranch raises Navajo-Churro sheep, a breed with a rich history dating back to the early 1500s when they were brought to North America from Spain. Over the last 450 years, the Navajo people of the Southwest developed the Churra sheep into their own breed, perfectly adapted to the arid climate. These hardy sheep are known for their resistance to parasites and diseases, making them ideal for minimal supplementation or medication. The sheep graze on pasture year-round, living as nature intended.

Holistic Approach to Animal Health

Outlaw Valley Ranch takes a holistic approach to ensure the well-being of their animals. They provide essential nutrients and minerals through kelp, sea salt, and organic sheep mineral, available free-choice at all times. Organic apple cider vinegar is added to their drinking water to support overall health and prevent worms and parasites. When needed, natural herbs and plants are used to address sickness or stress. The ranch strictly avoids antibiotics, chemical wormers, and fly sprays.

Pasture Management for Healthy Animals and Rangeland

One of the key practices at Outlaw Valley Ranch is their meticulous pasture management. The sheep are moved to fresh grass every few days, preventing manure buildup and promoting optimal grazing conditions. This approach not only benefits the animals by reducing exposure to parasites but also improves the soil and pastures over time. By building organic matter and enhancing soil fertility, they create a thriving ecosystem that supports healthy grass, wildlife, and, ultimately, nutritious meat.

A Superfood for Health and the Environment

Grass-fed meat, like the lamb raised at Outlaw Valley Ranch, offers numerous health benefits. It boasts a healthy fatty acid profile, rich in omega-3s, Vitamin B12, B3, selenium, zinc, and protein. With virtually no carbs and low calories, grass-fed lamb is a nutritious choice. Additionally, it contains oleic acid, a monounsaturated fat found in extra virgin olive oil.

Environmental Benefits of Grass-Fed Meat

Choosing grass-fed meat is not only beneficial for personal health but also for the environment. Mimicking the impact of wild herds, rotational grazing with ruminants fertilizes the land, enhances water infiltration, and promotes soil fertility. This regenerative practice contributes to a resilient ecosystem with increased biodiversity, carbon sequestration, and improved grasslands.

Commitment to Sustainable Farming

At Outlaw Valley Ranch, Alex and Kelsey Karol's passion for sustainable farming and their commitment to raising high-quality grass-fed meat shines through. Their thoughtful practices and dedication to the environment set them apart as local ranchers who prioritize the health of their animals and the land.
